Chargrilled Sweetheart Cabbage with Smoked Onion Salad Cream
If you’ve never char-grilled cabbage, this is your sign! This receipe delivers big flavour with minimal fuss.
1 Sweetheart cabbage (also known as Hispy cabbage) - 2-3 outer leaves removed
Neutral oil
Seasononing
Smoked Onion Salad Cream
Toasted flaked almonds or pine nuts
Cut the cabbage in half through the core and then into quarters. The core helps keep the cabbage together so try to be as accurate as possible.
Season in between the leaves and rub a bit of oil on the outer edges of the cabbage. Heat a griddle pan or cast Iron frying pan on high heat until smoking hot. Place the oiled, seasoned cabbage quarters cut side down on the hot pan. If you’re brave, use your fingertips to press the cabbage down onto the pan to get maximum coverage for extra char-grilled flavour. Turn the cabbage onto the other cut side of the cabbage after about 3-4 minutes (once you’ve got good colour on the first side). When the cabbage is nicely grilled on both sides, flip it onto the outer side to get some heat on the outside of the cabbage too.
Remove from the heat and drizzle with Smoked Onion Salad Cream and flaked toasted almonds or pine nuts before serving.
